Quickly and Easy Salmon Canapé with Fennel Carpaccio

Since the pandemic has stroke our lives, I feel the need to stop and relax a bit when the weekend is approaching. We have found a way of doing so through a kind of ritual called “Aperitivo”, have a couple of glasses of wine or cocktails accompanied by some niblings and in the background some Jazz.
This time the niblings were the recipe I am posting and - since we try not to waste any food – I have decided to have some salmon gravlax (don’t worry, I will soon add my recipe to make it) and fennel leftover in the fridge. If you do not have salmon gravlax you can replace it with the smoked salmon.
This recipe is super easy and quick, and you could even serve it during your dinner parties. (obviously when we will all be allowed to do that again)

Ingredients for Two Person
100 gr of Salmon Gravlax (in my case) o Smoked salmon
4 Crispy sourdough Crackers or unsalted crackers
¼ Fennel (you may have some excess depends on the size of it)
To Garnish
Few leaves of Dill
A pinch of Pink peppercorn for each canapé
For the Dressing
¼ of Blood Orange
3 tablespoon of Extra Verging Olive oil
1 pinch of Salt
Method
We start by making the dressing for our canape’. In a bowl we add the Juice from the blood orange, the salt, and the Oil, mix it and set aside.
To make the fennel carpaccio, slice very finely the fennel and place in the dressing, leave few fennel slices for the garnish.
In a serving dish lay the crackers, grab some fennel from the dressing and shake gently to remove the excess of the liquid. Place it on the centre of each cracker. With the salmon try to cover the carpaccio by creating a ring around it. (try to hide the fennel, it will surprise your guests!)
Place the few sliced of fennel we set aside earlier on top of the salmon with few leaves of dill and crumb the Pink peppercorn all over it. When you are ready to serve pour the dressing on each canapé.
