Eton Mess Ice Lolly with Coconut Cream
This ice lolly Eton Mess with coconut cream is great for all the family during the Spring/Summertime, it is the perfect snack for kids during playdates with their friends or for a kid’s party.
If you are a fan of Eton Mess this is for you: it’s got meringue, strawberry and coconut cream which is perfect for those who can’t have dairy as the milk is replaced with coconut cream. This ice lolly is simply delicious; the meringue makes the ice lolly Eton Mess so luxury and they have less sugar compared to the ones you can buy in the stores. The coconut flavour is not strong and contain less fat than the whipping cream, it is worth a try.
It is extremely easy to make, super-fast, it doesn’t break your bank account and it is so tasty!!
You will need fresh strawberry, meringue that can be bought from the store, icing sugar that will dissolve better than the caster sugar and coconut cream.
What Coconut cream to choose from?
The important part is to buy a good coconut cream that doesn’t contain any stabiliser (guar gum) which will prevent the cream from whipping.
Read the ingredient list on the label before buying the product, it should show just coconut and a bit of water. The brand that worked for me is Biona organic coconut cream (this is just a suggestion, and I am not working with this brand 😊).
The coconut cream needs to be stored in the fridge, not in the freezer, overnight. This will cause the separation from the water and the coconut cream, which will become solid and will help to whip the coconut cream into a soft peak.
Don’t shake or turn the tin of coconut cream otherwise the water will be in contact with the coconut cream, and you will not be able to whip it. Once opened the tin you will notice that the coconut became solid, take just the solid coconut and leave the water in the tin.
The water left can be used for making a yummy smoothie.
Ingredients
For 10 Ice lolly
382 gr / 11.56-ounce Coconut cream (about 2 tin of 400 ml)
100 gr Icing sugar (70 gr/ ½ cup Icing sugar for Coconut cream and 30 gr/ ¼ cup Icing sugar for the strawberry)
556 gr / 2 ¾ cup fresh Strawberry
47 gr / ¼ cup meringue or 10 mini meringue
Method
1.Chill the coconut cream tin in the refrigerator overnight, not in the freezer (as I mentioned before we are separating the liquid from the cream).
2.The next day store a medium bowl and the whisker in the refrigerator for 3 hours or ½ hour in the freezer, this will help to whip the coconut cream even better.
Wash the strawberries and remove the green top leaf. In a tall jar add the strawberries, 30 gr of icing sugar and blend for a few second, we still want to have a few bits of strawberries. Set the strawberry smoothie in the fridge to chill.
3.Remove from the fridge the bowl, the whisk, and the coconut cream tin. Don’t shake o tip the coconut cream otherwise the coconut will be in contact with the water.
Open the tin, take just the top coconut cream, at this point the coconut cream will be hard, and place it in the chilled bowl. Leave the water in the tin, you can use it to make a fresh smoothie.
Add 70 gr of icing sugar in the chilled bowl and whip with a hand electric mixer (or with a stand mixer) for 1 minute or until you have a nice creamy soft peak.
4.Break the meringue with your hands and insert them in the whipping coconut cream, folding all together with a spatula from the bottom to the top. Remove the strawberry smoothie from the fridge and pour 6 spoons of the strawberry liquid in the coconut cream and again folding it with a spatula from the bottom to the top until well combined.
5.Fetch the ice lolly mould and pour on each shape the coconut cream for ¾, then pour the remainder of the strawberry smoothie to cover each ice lolly. Insert the wooden stick on each ice lolly and place the mould to chill overnight in the freezer.

How long can I store the Ice lolly?
The Ice Lolly can be stored in the freezer, close in an airtight container once removed from the Ice lolly mould, for up to a month.

Ghiaccioli di fragola Eton Mess con Panna di Cocco e meringhe
Questi ghiaccioli di fragola Eton Mess con panna di cocco e meringhe sono perfetti per la stagione primaverile / estiva, sono ideali come spuntino per i bambini quando hanno amici a casa oppure come dolci per le feste di compleanno.
Eton Mess è un dolce inglese composto dalla stratificazione di meringhe, fragole e panna montata, una vera delizia, specialmente ora che le fragole sono di stagione e dolcissime. I miei ghiaccioli non contengono la panna che viene sostituita dalla crema di cocco e li rende ideali anche per chi non può consumare latticini. Questi ghiaccioli sono semplicemente deliziosi, le meringhe li rendono gustosi e hanno zuccheri ridotti rispetto a quelli che si trovano nei supermercati.
Il sapore del cocco non è forte e grazie al basso contenuto di grassi che ha il cocco rispetto alla panna sono ideali anche per chi vuole guardare la bilancia.
Son semplicissimi da fare, veloci e non spendi un capitale per farli.
Gli ingredienti che troviamo in questa ricetta sono le fragole, le meringhe che trovate nei supermercati, lo zucchero a velo che si dissolve meglio dello zucchero semolato e la crema di cocco.
Quale crema di cocco scegliere?
È importante comprare una qualità buona di crema di cocco, che non contenga stabilizzanti (gomma di guar) che non aiuta la montatura della crema di cocco.
Leggete bene la lista degli ingredienti nell’etichetta, prime di acquistare la crema di cocco, deve contenere solo cocco e un po’ di acqua.
Io in questa ricetta ho utilizzato la crema di cocco biologica di Biona (nota: non vengo pagata per sponsorizzare questo prodotto e non lavoro per loro 😊)
La crema di cocco deve essere raffreddata in frigorifero, non nel freezer, per tutta la notte. Questo formerà la separazione tra l’acqua ed il cocco, che diventerà solido ed aiuterà a far diventare il cocco in panna montata.
Non scuotere o girare la lattina altrimenti le due componenti (acqua e cocco) andranno a contatto e non riuscirete ad avere una crema al cocco montata.
Una volta aperta la lattina noterete che la parte superiore, il cocco, è diventato solido, prelevate solo la parte dura e lasciate l’acqua nella latta.
Potete utilizzare l’acqua per fare dei frullati di frutta.
Ingredienti
Per 10 ghiaccioli
382 gr di panna di cocco da montare
100 gr di zucchero a velo ( 70 gr per la crema di cocco e 30 gr per le fragole)
556 gr di fragole fresche
47 gr di meringa o 10 piccole meringhe
Preparazione
1.La sera prima mettiamo la latta di crema al cocco in frigo per tutta la notte (come ho già spiegato in precedenza questo servirà a far dividere i liquidi dalla crema).
2.Il giorno seguente mettiamo una ciotola media e le fruste in frigo per 3 ore oppure in freezer per ½ ora, questo aiuterà a far montare la crema di cocco).
Laviamo bene le fragole sotto l’acqua corrente e rimuoviamo le foglie. Inseriamo le fragole dentro in barattolo alto, i 30 gr di zucchero a velo e con l’aiuto di un frullino frulliamo la frutta per pochi secondi, non frullate eccessivamente la composta di fragole, vogliamo arrivare ad avere ancora dei pezzetti di frutta.
Conserviamo il frullato di fragole in frigo fino al momento dell’utilizzo.
3.Togliamo dal frigo la ciotola, le fruste e la latta di crema di cocco. Attenzione a non scuotere o giare la latta di cocco altrimenti i liquidi andranno a contatto con la parte solida del cocco e questo non si monterà. Apriamo la latta e rimuovete con un cucchiaio la crema di cocco, che a questo punto dovrà essere dura, lasciamo nella latta solo i liquidi che potrete utilizzare per fare un frullato di frutta. Aggiungiamo la crema di cocco, i 70 gr di zucchero a velo nella ciotola fredda e con uno sbattitore elettrico (oppure con una planetaria) montiamo per un minuto o fino ad ottenere una crema soffice e liscia.
4.Sgretoliamo grossolanamente le meringhe e mettiamole nella panna di cocco, giriamo con una spatola dal basso verso l’alto. Togliamo la composta di fragole dal frigo ed aggiungiamo 6 cucchiai del frullato di fragole nella ciotola ed ancora giriamo dal basso verso l’alto.
5.Prendiamo lo stampo dei chioccioli e per ogni ghiacciolo riempiamo per ¾ con la panna di cocco e copriamo il resto con le fragole frullate. Inseriamo per ogni ghiacciolo lo stecco di legno, copriamo lo stampo e lasciamo ghiacciare per 12 ore nel freezer prima di servire i ghiaccioli.
Note
Per quanto posso conservare i ghiaccioli?
I ghiaccioli si conservano chiusi in un contenitore ermetico, in freezer per un mese.
