Tenderloin fillet pork wrapped in pancetta!

The Tenderloin fillet pork cut is a cheap cut and this recipe is a dinner winner because it is not too complicated, it is tasty and it is quite quickly to make.


So why not try it!





Ingredients

for 3 people

  • 460 gr of Tenderloin Fillet Pork

  • 95 gr of thin Sliced Pancetta

  • 1 Clove of Garlic

  • 1 Sprig of Rosemary

  • a dash of Olive oil

  • 1 pinch of salt

  • Fresh grounded Black pepper

and a cotton twine for the Meat


For the sauce

  • 1 glass of white wine

  • 3 teaspoon of Dijon mustard

  • 4 Slices of Pancetta

  • The juices from the Fillet Pork roast (don't trash them!)


Method


Take the fillet pork out from the fridge at least 1 hour before cooking to relax the meat and preheat the fan oven at 160°C.

Take all the slices of pancetta and lay the pancetta overlapping on a chopping board until you have the length of the Fillet Pork. Slightly salt and pepper the pork and place it on the bed of pancetta and wrap the pork with the pancetta all the way over until is all covered.

Now, tie the pork with the string quite tight, in a pan place the garlic, the rosemary and the olive oil on a high heat.Once the oil is hot seal the pork on the pan, 2 minutes for side. When is completed take the pork off the pan (KEEP THE JUICES) and lay it on a tray and let cook it in the oven for 15 minutes or until it reaches the internal temperature of 60 °C. Once ready, remove it from the oven and let the meat rest in a warm spot about 15 minutes.




For the sauce we need the same pan you have used to seal the meat with all the delicious juices (you didn't take them away, did you?) and remove the garlic and the rosemary. Set the pan on a medium heat and add the pancetta to cook until golden, add the juices left in the tray and cook for 2 minutes. Pour the white wine, let cook until all the alcohol is gone, then add the mustard and cook it for 3 minutes or until the acidity of the mustard is disappeared.

Blend the sauce until is all well combined, remove from the pork the cotton string and cut it about 1 cm thick.

Serve the pork with the sauce.
